Marble Birthday Cupcakes
No need to decide if your kid just can’t choose between chocolate or vanilla cupcakes for their birthday party. The beauty of this marble birthday cupcakes recipe is you can enjoy both with either chocolate or vanilla icing. Or even no frosting at all and just a light dusting of icing sugar over top. It’s nice when the cake can be the star of the show.

Marble Birthday Cupcakes Recipe:
You’ll Need
- 1 3/4 cups all purpose flour
- 2 tsp baking powder
- 1 tsp salt
- ½ cup unsalted butter, at room temperature
- 1 cup granulated sugar
- 3 large eggs, room temperature
- 2 tsp pure vanilla extract
- 2/3 cup buttermilk
- 1/3 cup unsweetened Dutch-process cocoa powder
- 1/3 cup hot water
Prep and Cook
- Preheat oven to 350 F
Line a 12-cup muffin tin with paper liners or lightly grease - In a medium bowl, combine flour, baking powder, and salt and set aside
In the bowl of a food processor or an electric mixer on high, cream butter and sugar until pale and fluffy, about 2 to 3 minutes
Beat in eggs, one at a time, beating well after each addition
Scrape down sides of bowl as necessary
Beat in vanilla - Gradually add flour mixture in three batches, alternating with two additions of buttermilk.
Continue beating until well combined
Measure out about half of the batter and transfer to another bowl
Combine cocoa and hot water
Stir into this batter. Fill prepared liners with alternating spoonfuls of vanilla and chocolate batter, filling each about three-quarters full - To create marble effect, run the tip of a paring knife (or a toothpick) through the batter using a figure-eight motion to make swirls
Bake until tops are golden and cakes are cooked through (about 20 minutes)
Transfer tin to a wire rack to cool completely
Frost tops with your fav frosting if you like, or simply dust with icing sugar
