Balsamic Roasted Cherry Tomatoes
Roasted tomatoes are ultra-versatile and can be used in other recipes (like soups or sauces), or they stand alone as a super yummy side to many meats and fish. These balsamic roasted cherry tomatoes are a wonderful addition to many dishes or the highlight on their own. It’s the perfect side to grilled fish, chicken, or steak.

Balsamic Roasted Cherry Tomatoes Recipe:
You’ll Need
- 4 cups cherry tomatoes, halved
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp sea salt
- 1 tsp cracked black pepper
- 1/2 cup torn basil leaves
Prep and Cook
- Preheat oven to 325 F
Line a large baking sheet with parchment paper and set aside - In a medium bowl, combine tomatoes. olive oil, balsamic, salt, and pepper and toss to coat well
Transfer tomatoes to baking sheet and spread evenly
Scatter with basil leaves - Bake in preheated oven for 45 minutes to 1 hour, until tomatoes are soft and slightly golden and balsamic has caramelized
