Simple Supper: Black Bean, Corn and Goat Cheese Tacos
I walked in the door at 4:55 pm yesterday, and this dinner was sitting on our table at 5:20 pm. It’s the perfect post-work no-time-to-cook meal that we all need to keep tucked in our back pocket. It costs a quarter of what I would be charged to feed my family at the pizza place down the street, and it’s made with practical pantry items I usually have on hand.
If the crunchy taco shells don’t suit the tastes of everyone in your home, feel free to use whole-wheat wraps to envelope the hearty mixture. It works just as well, but I do prefer the crunchy texture of the corn shells, and suggest using those if your family enjoys them. For kids that may not enjoy goat cheese, I happen to have it on authority that grated cheddar makes a fine replacement.
